Roasted Harvest Salad

A salad substantial enough to be dinner. It brings warmth, crunch, and color to the table when the days get short.

Ingredients

  • 1 small squash, cubed
  • 2 tbsp olive oil, divided
  • 1 bunch kale, torn
  • 1/2 cup cooked quinoa
  • 1/4 cup pomegranate seeds
  • 1/4 cup toasted walnuts
  • 1 tbsp maple syrup
  • 1 tbsp Dijon mustard
  • 1 tbsp apple cider vinegar

Method

  1. Roast the squash at 425F with 1 tbsp oil for 25 minutes.
  2. Massage the kale with a pinch of salt until softened.
  3. Whisk the remaining oil, maple, mustard, and vinegar into a dressing.
  4. Toss kale, quinoa, and squash with the dressing, then top with pomegranate and walnuts.
Coach's tip. Massaging kale is the secret to a salad people go back for seconds on. Do not skip it.
