Ingredients

  • 1.5 cups cooked barley or brown rice
  • 2 cups mixed mushrooms, sliced
  • 1 tbsp white miso
  • 1 tbsp tamari
  • 1 tsp maple syrup
  • 1 tsp sesame oil
  • 3 cups baby greens
  • 1 scallion, sliced
  • Toasted sesame seeds

Method

  1. Whisk miso, tamari, maple, and sesame oil into a glaze.
  2. Sear the mushrooms in a hot pan until golden, then add the glaze and toss to coat.
  3. Wilt the greens in the same pan for 1 minute.
  4. Serve over warm grains and finish with scallion and sesame.
