The liturgy

Three rituals, served slowly

Order them from any seat in the parlor or courtyard. Each takes minutes on purpose; the point is what happens to the table while you wait.

Ritual 01

The Absinthe Hour

$24 for two · About 12 minutes · illustrative

The oldest ritual in the Quarter, performed the slow way: a four-spout fountain, a slotted spoon, one sugar cube, and patience.

  1. 01

    The setting. The fountain arrives lit from beneath. Two reservoir glasses, two spoons, one measured pour of absinthe verte in each.

  2. 02

    The drip. Ice water falls one bead at a time across the sugar. Rushing it is the only way to do this wrong, so we set the spout and leave it.

  3. 03

    The louche. Somewhere past the third minute the spirit clouds to green milk. This is the drink telling you it is almost ready.

  4. 04

    The toast. When the cloud holds, your server stirs once, names the herbs, and leaves you to the hour.

Ritual 02

Under the Cloche

Our old fashioned, sealed under glass with smoldering pecan wood and unveiled at the table while the smoke still climbs.

  1. 01

    The seal. The drink is built at the bar, then trapped under a glass dome with a breath of pecan smoke and carried to you blind.

  2. 02

    The wait. It sits in front of you for one full minute. The smoke settles into the whiskey; the table gets quiet on its own.

  3. 03

    The unveiling. The cloche lifts, the cloud rolls off the board, and the first sip tastes like a fireplace remembering summer.

Ritual 03

The Shedding

$22 · About 8 minutes · illustrative

A two-act rye service performed on the parlor cart: the rinse, the long stir, and a ribbon of flamed lemon oil to finish.

  1. 01

    The rinse. A chilled coupe is washed with anise liqueur and turned over the cart flame until only the perfume remains.

  2. 02

    The stir. Rye, cane syrup, and two bitters over a single column of clear ice. Ninety seconds by the clock, copper spoon only.

  3. 03

    The skin. Lemon oil is flamed across the surface and the spent peel is left coiled on the saucer. The old skin stays at the table; you leave lighter.

Rituals are limited to two per table per evening, because patience is a finite resource and so is the fountain. Fictional demo; every detail illustrative.
